The current revised edition of The China Study is an update to the first edition (CH, Jun'05, 42-5895). The new work offers the same message, but with added emphasis and some updating. Essentially, the study is based on the findings that rural Chinese communities whose residents consumed few animal products, but relied on high carbohydrate plant diets, showed low to non-prevalence of chronic diseases that afflict Western populations. High animal protein intake, meat, eggs, and milk products are all associated with raised cholesterol levels and can account for cardiac problems and other conditions such as obesity, diabetes, cancer, autoimmune problems, and more. Replacing some chronic patient's diets with whole food, plant-based diets has been shown to reverse some maladies. The authors review the impact of government, industry, academia, medicine, and the media in adding to the public's misunderstanding of the essentials of nutrition. They stress the fundamental role that nutrition performs in the myriad metabolic pathways that produce a healthy body and are frustrated at the medical profession's neglect in evaluating its critical role. Eating habits are ingrained in culture, but to improve the nation's health, the consumer must become aware of how food affects one's health.
